These cranberry-brie bites are one of my favorite festive appetizers for entertaining during the holiday season. These delicious appetizers combine sweet and tart cranberries, creamy Brie, and some pecans for crunch. They are rolled in buttery puff pastry sheets and baked until crispy and flaky.

Ingredients

  1. Puff Pastry Store-bought puff pastry sheets can be used in this recipe. Flaky puff pastry gives this recipe a whole new dimension. You may also use pastry dough or crescent dough rolls in some recipes. This recipe calls for crisp puff pastry sheets made of buttery puff pastry.
  2. Cranberries I use regular dried CRANBERRIES for this recipe. If you have any leftover cranberry sauce, you can use it. Fresh cranberries can also be used. You may also use fresh cranberries, but add sugar or honey before rolling them in.
  3. Brie Cheese – Creamy Brie makes a great combination with tart cranberry. Triple cream brie is an excellent choice as it gives you the perfect melted Brie in pinwheels, which balances out the tart cranberries.
  4. Pecans– For me, pecans are a holiday tradition. The pecans give this recipe a unique crunch and flavor.

Method

  • The puff pastry sheet and the Brie should be brought to room temperature. Allow them to rest for between 30-45 minutes. Preheat the oven to 400F.
  • Sprinkle some flour on the countertop and then roll the puff pastry out.
  • Spread the cream cheese onto the puff pastry sheet by removing the rind.
  • Add dried cranberries, chopped pecans, and a few more. Make a jelly roll from the puff pastry sheet. As tight as possible.
  • Start at one end of the roll and cut 1/2-inch thick slices.
  • Place parchment paper on a baking sheet. Place the flat sides down pieces of sliced bread on the baking sheet.
  • Bake for 20 minutes or until they are crispy and golden brown. Take the baking sheet out of the oven and let them cool on it for a few minutes before transferring it to a plate. Serve warm.

After you have cut the pinwheels into slices:

  2. Place them on the counter on a parchment-lined baking tray for 30 to 45 minutes.
  3. Bake at 400F for 20 minutes.
