Quick. Quick. You might think that mustard is the most popular condiment in the United States. But mayonnaise is the real deal. The stuff is used in burgers, pasta salads, sauces, and french fries. It’s worth $2,000,000 annually.

According to Ashley Strickland Freeman, it’s also the secret ingredient in nearly all most popular recipes.

Mayonnaise is a magic ingredient to me. It gives baked goods moisture and makes cakes and doughnuts tender,” she said. It makes the best pie crusts and scrambled eggs fluffy.

Mayonnaise makes everything better.

Mayonnaise is a mixture of egg yolks and oil. It can also contain vinegar, oil, lemon juice or vinegar. Mayonnaise is rich in protein and high levels of vitamin E.

Freeman claims mayonnaise tastes great. It’s used in everything, from scrambled eggs to toffee desserts. There is no set recipe for how much mayo to use or incorporate. Keep these things in mind.

Freeman states that mayonnaise contains eggs to substitute 3 tablespoons of mayonnaise for an egg. However, this is something I would be careful about when baking. There are other factors to be aware of. Some mayonnaise brands don’t use as many eggs as others.

Baking With Mayonnaise

Chocolate chip cookies

If you search the internet, you’ll find many variations to chocolate chip cookies. Some cooks swear by half a banana in the batter, while others believe brown Sugar is the key. For crispier and more flavorful cookies, use mayonnaise in place of butter. You can prevent the bottoms of the cookies from burning on the baking sheet by adding extra oil.

Chocolate cake

Although it may seem strange to tell guests that you used half a cup of mayonnaise to make your homemade chocolate cake, they will be impressed by the taste. You can swap it out for oil. Mayonnaise gives your cake a creamier consistency and adds a little flavour to the mix.

Quiche

Add a few tablespoons of mayonnaise to your favourite quiche recipe. The mayo will give your quiche a bit more tang and prevent it from drying out.

3-ingredient dinner rolls

That’s right. Quick and easy rolls can be made with 2 cups self-rising flour, 1-quart milk, and 3 heaping tablespoons of mayonnaise. Mix all ingredients until well combined. Bake in muffin tins at 350 degrees for 15 minutes. Voila. Homemade dinner rolls.

Grilled cheese

Although technically it isn’t baking, who doesn’t like a good grilled cheese. Most people spread butter on theirs to get a crispy crust. Instead of brushing the bread with butter, apply a thin layer of mayo. The oil from the mayo will give it a crispy texture and keep it moist.

The bread was a hot topic during 2020’s stay at home orders. The baking powder, acid and heat react slowly when the dough heats up. This is unlike baking soda.

Bananas Foster Bread

Ingredients

  • 1 cup mashed very ripe banana (3 to 4 large bananas)
  • 3/4 cup of firmly packed light brown Sugar
  • 1/4 cup salted butter, melted
  • 1 large egg
  • 2/3 cup Duke’s Mayonnaise
  • 3 tablespoons dark or golden rum
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 banana, cut lengthwise
  • Browned butter-Rum Glaze (recipe below)

Preparation

  1. Preheat the oven to 350°F. Grease a loaf pan 9 x 5 inches.
  2. Mix the brown Sugar, butter and vanilla in a large bowl using an electric mixer. Continue beating until smooth.
  3. In a large bowl, combine the flour, baking soda and salt. Mix the flour, baking soda, salt and cinnamon in a medium bowl. Stir until well combined.
  4. Place the batter in the pan. Add the banana slices, cut side down. Bake at 350° for 1 hour 5 minutes or until a toothpick inserted into the centre comes out clean.
  5. Let the bread cool on a wire rack in the pan. While the bread cools, make the Browned Butter Rum Glaze.
  6. Take the bread out of the pan and drizzle the Browned Butter Rum Glaze over it.

Glaze with Brown Butter-Rum

Ingredients

  • 2 tablespoons salted butter
  • 2 tablespoons dark or golden rum
  • 1/2 cup powdered Sugar

Preparation

  1. Butter should be cooked in a small skillet on medium heat for about 2 to 3 minutes. Stir the pan now and again until the milk solids brown and smell nutty.
  2. Turn off the heat. Add the rum to the pan. To cook the alcohol off, return to the heat. If using a gas stove, carefully flame the mixture. The glaze should be transferred to a small bowl. Whisk in the Sugar until smooth. This makes about 1/2 cup.
