Teriyaki Chicken

Ingredients

You can choose between 4-5 boneless thighs of chicken or two boneless breasts

1 cup short-grain rice

One avocado

Two tablespoons of cooking oil

For Teriyaki Sauce

1/2 cup soy sauce

Use two tablespoons of rice vinegar or white wine vinegar

1/4 cup brown sugar

Honey 1 tbsp

1 tbsp of sesame seed oil

Finely chop 1 tbsp of garlic

Finely chopped Ginger, 1 tbsp

Optional: 1/2 tsp of red chili flake

2 tsp of cornstarch

1/4 cup of water

Asian Coleslaw

Cut one carrot into thin matchsticks

Thin matchsticks and a small cucumber

2 cups of red cabbage, julienne

2 or 3 sprigs of cilantro

Green onion

Dressing

1/4 cup apple cider vinegar

Sugar 1 1/2 tbsp

1 tbsp of sesame seed oil

1 1/2 tbsp sesame seeds

Salt & pepper

Steps

1- Combine all ingredients for the teriyaki in a bowl. Pour the mixture into a pan. Cook at a simmering heat while constantly stirring. After it starts to boil, reduce the heat for 5 minutes. Mix cornflour with water and add it to the sauce, stirring constantly to thicken. Let it rest after you remove it from the heat.

In the fridge, marinate the chicken with one-fourth of the sauce.

Rice must be prepared following the instructions on the packaging.

Combine the rest of the vegetables with the chopped green onions and cilantro.

In a non-greased pan, lightly toast the sesame seeds for about two minutes on medium heat. Combine them in a bowl with the rest of the dressing ingredients. Mix the dressing with the slaw. Keep chilled until ready to assemble the bowl.

Add the chicken to the skillet with oil that has been heated over medium heat. After about three to four minutes, add some sauce and turn the chicken. Cook the chicken for a few more minutes. Cover the chicken with any remaining teriyaki. The chicken can be cooked thoroughly by simmering for several minutes, occasionally turning it over and adding the sauce. Once the chicken is glossy and glittering, remove it to a plate, cool it down, then slice it into strips.

Slice the avocados.

Rice should be at the bottom. On top of the coleslaw, place the chicken and avocado. Sprinkle sesame seeds as a garnish on top.

Oyakodon

Ingredients

Cut 150 g of skinless and boneless chicken thighs into small pieces

1/2 medium onion sliced

1/2 cup chicken stock or dashi

Add more soy sauce to your taste.

1 tbsp Mirin

1 tsp Sugar

Two large eggs

Serve 1 1/2 cups of cooked rice

Green onion, sesame or togarashi oil, optional nori or togarashi, as a garnish

Steps

1- Combine the mirin, sugar, and soy sauce in a large mixing bowl while preparing the rest of the ingredients. Let it sit for 5-10 mins.

Use chopsticks and a bowl to break the yolks of the eggs carefully. Be sure to beat the eggs and keep the whites visible gently.

Bring the chicken stock to a boil over medium heat in a small saucepan. Add the onion to the pan and let it simmer for about a minute. After adding the chicken mixture, cook it for two minutes on each side.

When the chicken is almost ready to be cooked, add the egg mixture to the pan and let it sit for a couple of seconds until the edges are nearly set.

The eggs should be lightly scrambled and then cooked for another few seconds to keep them a little runny. Enjoy with a garnish on top of a bowl of rice!

Japanese Chicken Curry

This delicious warm food from Japan can be prepared by anyone – Japanese Curry! This delicious meal is made with vegetables and chicken thighs cooked in a curry sauce. It’s perfect for lunch or dinner. It is easy to make this Asian recipe at home.

Ingredients

1 1/2 tbsp Vegetable oil

Cut two yellow onions into thick wedges

Two cloves of minced garlic

Buy 1 pound of boneless chicken thighs in bite-sized pieces

Cut two carrots into thick wedges

4 cups chicken broth

Peeled and grated one apple

Honey 1 tbsp

Salt Kosher 2 tsp

Black pepper, 1/2 tsp

Two potatoes cut into 1-1/2 inch pieces, soaked in water for 15 minutes

Curry Sauce Mix 1 Pack

Steps

1- Sauté the onions in oil in a large pot on medium heat until they become transparent.

2 Cook the garlic until it becomes aromatic, about 30 seconds.

3 Add the chicken to the pan and cook until opaque.

After that, add the carrots and chicken broth.

After the soup has reached a rolling boil, remove the scum and fat from the surface.

6- Add the honey, salt, pepper, and grated apple. Allow it to simmer for 20 minutes, uncovered. Stir occasionally.

After 15 minutes, or when the potatoes are done, add the potatoes.

8- Pour in the Curry one or two blocks at once and stir with a wooden spoon until it has dissolved.

9- Simmer on low heat with the lid off, stirring occasionally, until it thickens.

Serve the Curry with white rice.

Okonomiyaki, Japanese Savoury Pancakes

Ingredients

3 cups finely shredded cabbage

Chop 1 1/4 cups scallions

1 cup panko breadcrumbs

Sea salt, 3/4 tsp

3 beaten eggs

Virgin olive oil

Serving

Worcestershire sauce

Mayonnaise

Sesame seeds

Pickled Ginger

Half-sliced sheet of nori

Microgreens, 1/2 cup

Steps

1- Combine the cabbage, panko crumbs, scallions, and salt in a large bowl. Stir slowly while adding the eggs. If it is too dry, rest for 10-12 mins.

Heat a nonstick skillet to medium. Pour the mixture into the skillet using a 1/4 cup after brushing the pan with olive oil. If it does not look cohesive, it will become cohesive when the egg is cooked. Use a spatula to gently press the mixture into a layer of 1/2 inch thickness. Cook each side until brown, lowering heat as needed. Repeat this process using the entire mix, cleaning your skillet and adding more oil if necessary.

Add a small amount of Worcestershire sauce to the okonomiyaki. As a garnish, add nori, pickled Ginger, and sesame seed. Top with microgreens if desired. Serve warm.
