This rich and chocolatey cupcake takes just 2 minutes to make, 2 minutes to bake, and 2 minutes to serve.
Ingredients
- 3 Tbs plain flour
- 2 1/2 tbs caster sugar
- 1 1/2 tbs cocoa butter
- 1/2 teaspoon baking powder
- One tablespoon of butter melt
- Three tbs milk
- 1/4 tsp vanilla extract
CHOCOLATE ICING FOR TWO
- Soften 3 Tbs butter.
- 1 tbsp cocoa powder
- Six tbs icing sugar
Method

- Combine dry ingredients in a small bowl until well combined.
- Mix in the butter, oil, milk, and vanilla. Stir with a fork or small whisk until everything is smooth.
- Separate batter between 2 large baking cups (approx 6cm diameter).
- Place the first baking cup in the microwave. Cook for 1 minute at medium-high.
- Once the cupcake is cooked, remove it and continue the process with the second cupcake. This will ensure that the cupcakes rise evenly.
- Mix the chocolate icing by mixing the butter in a bowl with a spatula until smooth.
- Stir in the cocoa powder until you have no lumps. Next, add the icing sugar to make the frosting thick and creamy. To make it easier to spread, you can add a little milk.
- Pipe frosting onto two cupcakes using a small piping bag fitted with the nozzle you prefer. Or, use a small offset spatula to ice the cupcakes.
