  • Spices and herbs – The list is short. Red pepper flakes, dried oregano and salt are all you need.
  • Tomatoes I use canned tomatoes for this recipe and all my tomato soup recipes. I use San Marzano chopped tomatoes and canned chopped tomatoes. Can you substitute canned diced tomatoes for fresh tomatoes? I prefer to keep the San Marzano tomato preserves for their extra flavor.
  • The chicken I use boneless, skinless chicken breasts for this recipe.
  • Chicken stock – This is the soup’s liquid base. This can be reduced by half or a quarter and served over pasta as a chicken dish with marinara.
  • Cream — just a little to make it creamier

How to make tomato basil chicken soup

  • In a slow cooker, heat some oil and add the garlic and onions. Sauté for about 2 minutes.
  • Mix in the red pepper flakes and oregano.
  • Mix the tomatoes with the water and combine.
  • Place the chicken breasts into the tomato-stock mixture.
  • Cover the crockpot, and cook it on high for four hours.
  • Once the chicken breasts are done, remove them from the slow cooker and mash them into pieces.
  • This soup can be added back to the slow cooker.
  • Mix in chopped basil.
  • Serve hot

Ingredients

  • Three tablespoons Olive oil
  • One chopped yellow onion
  • Four cloves of minced garlic
  • 1/2 teaspoon Red pepper flakes
  • One teaspoon of dried oregano
  • One can of diced tomatoes 14.5 oz
  • 1 can San Marzano canned tomatoes
  • 2 cups chicken broth
  • Two chicken breasts weighing approximately 1 lb
  • 1/4 cup heavy cream
  • 8-10 basil leaves torn in chiffonade
